Start out with about 5 cups of freshly shredded green cabbage. Make sure to use a large bowl. If desired, substitute one cup with shredded purple cabbage and one cup with shredded red cabbage. Purple and red cabbage adds extra flavor and color. Next, add about one cup of finely shredded carrots. For the dressing, mix or whisk in a small bowl one cup of mayonnaise, one tablespoon of apple cider vinegar, two teaspoons of honey or sugar, a half teaspoon of celery seeds and one half teaspoon of dried mustard. Add pepper and salt to taste. Pour the dressing over the cabbage mixture, stir well and refrigerate for at least one hour before serving.
